Causality is enc oded into the geometry of light cones that bend under the influence of gravity. Quantum theory\, on the other hand\, tells us that nature is intrinsically probabilistic. A sharply defined causal structure\, as it appears in classical general relativity\, contradicts quantum theor y. A more general framework is needed. This colloquium outlines a rese arch programme in quantum gravity to develop a mathematical understand ing of the causal structure at the quantum level. This is\, in fact\, a problem common to different approaches to quantum gravity\, from hol ography\, to the perturbative S-matrix approach and loop quantum gravi ty. After a brief introduction into the conceptual aspects of the topi c\, several recent results on this frontier will be presented. First\, the construction of physical observables using the light cone geometr y is explained. Then\, building upon earlier results in loop quantum g ravity\, the description is taken to the quantum level. In my talk\, I will present recent res ults on quantum-gas microscopy of many-body systems both in and out of equilibrium. In particular\, I will discuss an experiment demonstrati ng strongly constrained out-of-equilibrium transport and the emergence of Hilbert space fragmentation in two-dimensional tilted Hubbard syst ems. In the second part of my talk\, I will introduce a hybrid experim ental platform based on the alkaline-earth atom strontium. By directly loading thousands of individually addressable atoms from a magneto-op tical trap into an optical lattice\, we achieve high-fidelity\, low-lo ss imaging and iterative assembly of atom arrays. For applications in quantum computing and simulation\, we encode a qubit in the metastable fine-structure states of strontium\, demonstrating long coherence tim es\, high-fidelity control\, and fast initialization via coherent thre e-photon coupling from the ground state. I will conclude by outlining our ongoing work on a new experimental platform that integrates an opt ical resonator with tweezer-trapped atoms\, enabling novel light-matte r interfaces for quantum simulators and quantum computers. In quantum materials inside optical cavities\, t his feature can be exploited as electrons and cavity-photons are easil y pulled away from their mutual equilibrium\, even in the steady state . This offers new routes for a non-invasive control of material proper ties and functionalities. Motivated by recent experimental puzzles ari sing with transition-metal-dichalcogenides inside Fabry-Perot cavities \, we show how the absence of thermal equilibrium between electrons an d photons leads to qualitative modifications of the material’\;s properties in two different ways: 1) the electron distribution shows e nhanced fluctuations near the Fermi surface due to the breaking of det ailed balance\; 2) the scattering between electrons in the steady stat e acquires a genuinely non-thermal component which can for instance en hance the tendency to pair and become superconducting.
